maybe this was explained... it makes sense to me to use the E ionian mode for the Emaj7 but I don't understand how the B dorian mode fits in there as the second mode of E ionian would be F# dorian

Marty, this lesson really introduces in a very easy fashion, two chord vamp, the idea of switching scale tones on the fly. I would love to see some more lessons on switching modes on the fly. Personally I view this example as going from Ionian to Mixolydian. But you could do Dorian->Aeolian or major pentatonic->Dorian->minor pentatonic. Anything that you may have picked up when you were learning to change scale tones on the fly such as this example.
