Damn, I have a new respect for Asian meals....love your videos....Love Chinese food...but there is a lot of steps to prepping these dishes...,more so then many American "gourmet" dishes.
hey Kai, I use this very recipe and my family loves every bit of the lo mein, we no longer order out. What ever the family wants I find it here with you and make it at home.
@kevin26tx In a pinch you can use spaghetti but they aren't the same. Most good (Italian pasta) spaghetti is made with semolina flour which is a very coarse milled wheat; the Asian noodle is made with finer milled wheat and egg so you will get a different taste/texture. It would still make a delicious dish, however. Happy cooking :)
@Mightylite94 It may be because most Asian(Southwest or East) cuisine, like African or Latin American food, calls for fresh, usually unprocessed ingredients(i.e not from a can).
@secundadonna lol, i work at a chinese restaurant, im 16 but i always look at them and wonder how they are skinny. They eat like horses and weigh 100 pounds. lol
@dgod724 maybe you are using "toasted sesame oil", that one is way too strong. sometimes it is toasted even though the label does not say. i got it right at the third try, I bought a brand that was not toasted. buy the one with the lightest color.
@p4rt1 marinate your chicken in a little bit of cornstarch, seasoning, and egg whites (velveting). That should soften it up and keep it moist in high heat :)
I really do not care for lo mein using the round noodles, it is so much better when you use the square noodles, the noodles pick up so much more flavor.
@pp00qq I agree with your general sentiments but for accuracy a wok is a pan and that particular pan clearly is non stick coated so it is not only a wok but also (less accurately) a non stick pan.
Thats not a wok dude, It a really funny looking non stick frying pan. And judging by the look of his frying pan some non stick already ended up in his food.
There is only one way to wok and that is with a properly seasoned carbon-steel wok that is seriously allergic to dishwashers and soap. I am not sure where this dude learned to cook but it ceratinly wasnt in asia.
@Thecookingfreak Quit hatin' on the man! Don't you have anything better to do? As far as your comment goes about "one way to wok," yeah, I used to think the same thing. However, not everyone can afford the BTU's to "wok your way."
I must say, though, that you are super cool for adding an account just to make comments toward people that use non-stick pans. Do us all a favor that enjoy Itkman's recipes and troll elsewhere, preferably in your own country. Thanks buddy!
@Thecookingfreak Of course it is a wok. It may not be a carbon steel one, nor is it made of chocolate, but it is a wok. I have seen this guy also use a seasoned carbon steel wok, watch his other videos. PTFE is insert, eat it along with all the other dirt we accidentally eat that is far more dangerous.
Hey, what kind of noodles are those? I've seen "chow mein" noodles in the store, but they are thin and I prefer the thick variety. Also, I've heard people say to just use spaghetti or linguine noodles, which I think would be wrong. Finally, I've read that soba noodles are best. What kind do you use and which would suffice? Thanks!
Just wondering...Does this have the strong soy sauce taste? I've been to many Chinese Restaurants and each place has something different that changes its tastes from the others. I personally dont like the strong soy sauce taste.
omg!!!! my mother would kill me if i used a flat iron spatula on that kind of pan. lol. he scraped the whole thing. wood ppl use wod!!! ;D cant wait to try this, hope it comes out as good as the chinese around my house.
I always thought lo mein mean the kind of noodle that's used (in chinese atleast) that's stretched and boiled. Never thought about the other meaning of lo which is sauce.
i think the one being stretched and boiled is lai mein. lai means "pulled" in cantonese/mandarin. lo is mixed or stirred and etc. so technically its mixed noodles. the sauce used can be any kind of sauce because the term lo mein is broad and very general. its kinda like stir-fry....anything goes
he used egg noodles. those can be found in most asian grocery stores. if you don't have one anywhere near you just use spaghetti...its a little different but there really wouldn't be much of a difference in taste
The amounts are given, you just have to click the link on the description. The only thing Kai doesn't mention is the amount of vegetables. But anyways, that isn't really important to know, just add as much as you want.

I believe he used egg noodles. You can find these at your local chinese supermarket. They are packaged pre-cooked. His recipe will work well with other noodles. Jjapanese "udon", for example, will be a nice alternative.
