  • Two Questions:

    Do you hydrate your dry beans first?

    Are those ham hocks smoked or sweet?

    In Kentucky I can only get sweet unfortunately, as I grew up on smoked.

  • @birddog2017 Thanks for coming by! The answers to your questions are: 1 No, I just rinse and pick through my beans and cook them in the crock pot all day. I have never found a need to presoak. This is a personal choice. If you are going to cook them all day anyway, I see no need to presoak them. 6-8 hours in the crock pot does the trick fine. Next, my ham hocks are smoked. I don't believe I have seen "sweet" hocks in the store here. I have one store that smokes in house, Yummy! Noreen

  • @atticus9799 Noreen, Here in Upstate NY, the "sweet" ones are really just unsmoked pork hocks...Lee bought them for me by mistake once and they did NOT do the trick. I added some liquid smoke to try to make up for the difference. (hehe, he seems not to grasp that some cuts of pork are available in smoked or "fresh" or "sweet"...I was not happy with my unsmoked Picnic ham...ham merely being a cut of meat and not it's treatment. But the old boy is learning! PS your dish looks wonderful!

  • I have never used dry beans. What are you looking for when you pick through them?

  • @olly02169 You want to make sure that they are clean for one and that there are no stones or small rocks in there with the beans. Those wont be tasty and you might break a tooth. Also you want to throw out any weird looking beans just to be safe. Because beans are a natural thing, lots of other stuff can get in there with them even if they are packaged and purchased in a nice clean grocery store.

  • @katzcradul Well, theres a story about that.....we actually had an argument as to whether we were going to have cornbread or rice. Rick wanted rice so, well, you know the story. I just think that serving both is too much food and its so heavy all at once that I try to only do one at a time. Plus, it was late and I was tired. Next time, we will have cornbread with it. I had to laugh at your YP comment. I ALWAYS have ham hocks in the freezer! Never bought them before we moved to NC.

  • Hiya Noreen! I noticed you mentioned the home canned jalepenos...LOVE IT!...Do you have a video for making those? My hubby and I own a garden center and we have a HUGE garden and I always have way too many jalepenos and chilis left over... I have found recipes online but I fear trying random recipes I TRUST YOU and would love your recipe!

  • @Monicasdestiny You know, I actually did video when I canned peppers last, but did not end up doing an edit because it came out so long. That was before I attained partner status, so now I guess I can let that one go up without it being rejected for being too long. I will go home and edit that one and throw it on up here so you can see what I did. Its really easy, just pack the raw peppers whole or sliced in the jars and pour over hot brine and then process for 10 minutes in a water bath.

  • looks yummie!! have you ever tried dehydrating the leftovers to put in food storage? I've been reading a lot lately about how some backpackers will make a dish like this (meat done separately from the beans), then dehydrate it all together to take on the trails. i'm wondering if that would work for long term storage too? instant meal when needed.

  • I don't understand how this can be honestly called "the simplest of meals". In the world of suffering to come, we will all be overjoyed to be eating pork and beans or Spam or hash right from the can rather than starve to death.

    I'm sure plenty of us (in our student days of bitter struggle) ate much more simply than this complicated and time-consuming "beans and rice and sausage and spices and veggies and ham hocks" dish.

    It's long past time to mentally prepare to eat like a refugee.

  • @Torgo1969 I guess the premise is if you want to eat like a refugee, prepare like a refugee. I plan to eat like I always eat. I've prepared my long term food storage to the point that I will eat just like I do now...a well rounded diet, full of variety, color, and nutrients, with plenty of fresh fruits and vegetable from my garden. I would never plan to fail. My cup is more than half full.

  • @katzcradul I respect every prepper even if we differ somewhat. If you're a homeowner and have a garden I hope you have a serious armory to protect yourself and your tasty resources from the looting hungry hordes. Good luck to you.

  • @katzcradul I seen the comment the Torgo1969 wrote as well and just rolled my eyes. Another BOB prepper that is not preparing or prepared at all. Expecting MADMAX and the reality will be a Depression for 20 years. Learning to cook well and cheap, will be much more valuable than a box of energy bars and granola mix.

  • @Yankeeprepper I pondered a response to Torgo 1969, and then scrapped the idea. What's the point. A mindset is difficult to change. If all heck breaks loose, I mean really bad, I feel like I've got a fightin' chance hunkering down. But running around in the woods with thugs, walking wounded, folks newly off their meds...not so much. The other thing about having an armory to protect my resources...well I do, and I crawl in bed every night, with a retired, Air Force marksmanship instructor!

  • Great recipe. When I make bean dishes, I soak the beans in water overnight. Less cooking time. I only use non fluoridated water, since fluoride is a toxic poison.

  • @Kitswain59 I agree about the Fluoride. We use a Berkey water filter with a fluoride filter. I also have a special filter on my kitchen sink that I use for water. Thank you for watching and commenting! Noreen

  • @Kitswain59 flouride is fine to consume because it is injected into the water at sutch a low mol/dm3

  • @05clenharth Fluoride should not be consumed. The EPA finally announced it causes Fluorosis, the pitting of teeth, BUT they didn't mention that it causes lower IQ, thyroid problems, bone cancer, etc. It is the main ingredient in rat poison. TheAlexJonesChannel on youtube has some great videos on it. You can also search for a video called Question Your Reality.

  • @Kitswain59 Clorine gas also kills you if you smell it yet has saved millions of lives cleaning water, the same for penecilin and many other things. You may be interested to know that you also probably wouldnt have teeth if it wasnt for the stuff, companys put it in water because the people dont clean there teeth enough and eat so much crap.

  • LOL! holy buckets! I took the chicken out of the freezer to make you nuggets for tonight, but now they will have to wait another day. I am putting this on right now for tonight. I am a big fan of Beans and Rice and have a few recipes myself, but I am trying yours. I will have to go get some sausage.

  • @Yankeeprepper Let me know what you think. This is just my way. Have been doing it this way for years. I figure beans should not be rocket science. I just throw stuff in the pot and cook it. Easy.

  • @atticus9799 I have a real miss mosh of ethnic favorites. I grew up in a predominitely Italian area and learned to love many bean dishes. And having spent some time in Miami as well I really fell for Cuban cooking. White bean soup, Cuban breads and Cuban rice and beans....oooooo to die for. Cubans and Italians know how to cook cheap and DELICIOUS and healthy. I use to eat on 8th street, west Miami as much as I could get there. Good stuff and great prepper recipes,how to feed many on dimes.

  • @katzcradul That's "Minnesotans". I have 4 hamhocks in the freezer and 2 ham bones from smoked hams as well. Not to mention a 1/4 cow, half a pig and almost a whole deer and who knows how much chicken. My wife buys hamhocks whenever they are on sale. If you are really broke, 3-4 slices of bacon will do in a pinch as well. (The hog capital of the world is Iowa). Us "yankee city folk" like to be prepared, lol.

  • @katzcradul "Minne" means water in Sioux and "sota" means sky tinted or blue sky. So we have....The land of sky blue waters! (and the white man brought beer and whiskey which means there is gonna be trouble tonight!! LOL!)
