I did not see the instructor stress the main point in this demonstration, namely that the stored energy for the spark was stored not on the plates but on the plastic dielectric. The vast majority of people are totally convinced that everything depends on charges on the metal plates which, however, only act as electrodes to contact the principal areas of the dialectic That is basic to understanding how a capacitor works; even expert authors talk of plates with plus and minus charge.
