Its no mushroom. Its a complex of bacteria and yeast. And maybe plastic may not be the best choice, because the vinegar in the kombucha can dissolve chemicals out of it. If possible let there be only contact with glas after the tea is together with the mushroom, no metals or plastic.

@Caelidh -- I am a baker and pastry chef by trade, so I am well aware of what the process of fermentation is and yes it requires food for the yeast, sugar or starch (which is sugar really) is the food for the yeast. My point was TOO MUCH SUGAR is a bad idea, you don't need a LOT of sugar to make fermentation work... a little sugar goes a long way, and that was my point, why add all the extra sugar you don't need? yeast multiples like crazy with just a small amount of sugar, more is not better.

I like to put my fermented tea into jars with fruit or flavor (my favorites are ginger or raspberry) and leave those out for a couple days and it will do a secondary ferment and become more fizzy..

Ok, There is another way to do these. You can put them in a large GLASS Bowl thats a little larger with some water and sugar. Cover it with a White Clean cloth and let it sat on the cabinet covered for a week or two...then it begans to Reproduce (babies)

@ZebZachary It's called a 'scoby', that's the mushroom's name. She pronounced it 'scoobie'. I don't know if that's normal or it's just the way she says it, but it's good enough for me.
