Thats a live octopus tenacles not fully not dead.....cut to peices and still moving, served very quick. .. infact you can choke if eating it due to the suctions.
The octopus is dead, its so fresh, that the neurons are still firing using the last stores of ATP energy in the muscle tissue, which is causing the moving. Its similar to cutting off a chickens head, or moving frog legs in salt.
Moving since it was probably, and should have, been cut up recently. It's like going to a sushi restaurant and seeing that slice of fish twitch on your dollop of rice. It's a sign of freshness.
My Korean mom hates this dish, though. She thinks it's pretty disgusting how the suction cups get stuck in your mouth which is kinda funny since she grew up eating seafood.
so they cut the tentacles off the octopus...what happens to the head? does it die? or do they have like octopus tentacle farms where they dismember octupusse- err, octo...pie?... and then wait for them to regenerate(they can do that right?) new ones? either way that's not really a nice thing to do to such an intelligent creature.
@pepeotf45 Well, yeah, after drowning it in corn syrup and deep-frying the shit out of it, there's not really another option. Then again, that's why even your males have tits.
@i8mud4you lol np it says it in the description btw 'My friend Sarah's first bite of sannakji, a Korean dish that consists of live octopus tentacles.'

@konniewithakay ironically, thats what's making it move by reactivating the neurons in it.
