When you start the race, fly the Hunter to Las Venturas airport, land it, deliberately lose the race/ time trial, and the Hunter will be there when you spawn back at LV airport.

@MrStubbja If you are new to San Fierro, it may not be there until very later in the storyline. If you have completed the game, it should be there, if not, travel to the other side of San Fierro,then back, see if its there, if not, repeat, you'll get eventually, I downloaded my savegame, so im not 100% sure.
