The main reason for this, besides it having metal characteristics, is because it'll start redirecting the waves all over, and certain waves cross which produce a spark. By using tinfoil to protect themselves, they are ultimately making the waves bounce away considering a. they are not in a small microwave / area and b. they are far enough away.
