@fabo6589 i think it was just showing her overreacting to choking. she is very superstitious and took the precaution of plopping 2 spoonfuls of mashed potatoes on the table before she could resume eating. to keep from getting choked again she instead of eating the potatoes just put the spoon in her drink. in the end her potato plopping method didnt work and she accidently dumped her plate on herself. so the whole thing was just to show how clumsy and superstitioius she is. i hoped this helped.

@fabo6589 when they were filming umbridges speech, they were probably planning to have a cut scene to trelawney acting insane and not paying attention, to highlight the tension in their relationship i suppose. therefore they asked her to do the whole scene even though they'll only use a couple of seconds of it, because i think shes improvising. i think it probably killed the tension of umbridge's speech which is why they didn't use it in the end.
