Here's more info from the web: "To substitute active dry yeast for instant, activate the yeast before adding to recipe & reduce the amount of water you add later in the recipe by the amount of water you proof the yeast in. You may also need to use 20% more yeast since active dry yeast is not as potent."
@m1kaela - You could make extra dough and make the crust thicker or try using a regular pan with no holes. Remember that a dark pan cooks hotter so you could also use a light-colored pan. It might take you a few tries but homemade pizza is worth the effort!
@cyberyanmar - Here are a couple of suggestions: 1) Make sure your oven is hot enough. It takes a long time to reach 425, my oven takes 45 minutes. Also, check the temperature with an oven thermometer because maybe your oven is off and needs to be calibrated. 2) Make sure you oil the pan first. 3) If your pan is shiny, or silver, you can also try a darker pan. 4) Be sure to use the lowest rack in your oven. @nimarocks1 - With a small dough like that, the standard paddle seems to work better, and fast. Even with any size dough, I do not have luck with the dough hook. The dough always rides up the paddle so I wind up kneading larger doughs by hand.

how about putting the holed pan onto the pizza stone? would that be beneficial at all?
@hcvang - When I make pizza using a pizza stone, I use cornmeal to dust the wooden peel which allows the pie to slide off the peel onto the stone. I've never tried cornmeal with the holed pan but I'm making pizza tomorrow and I'll try it and report back. As for putting the holed pan on the stone, it might defeat the purpose of air getting under the pan, and I think the extreme direct heat might damage the pan. But if you try it, please report back.

@anteracmacash - There is no fat to drip. You just coat the pan with a bit of oil (no more than 2 teaspoons) just like you would grease any baking pan. If fat drips out from the holes, you've used too much oil to grease the pan.
@bkazapa - They are related but not the same. Pepperoni is spicier, usually smaller, and drier so it's better suited for pizza because it doesn't add too much moisture. Salami is usually milder and moister, so it's better suited for sandwiches. But if you prefer the taste of salami, you can use it on pizza, too. But to me, pepperoni makes the best crispy pizza.
@cyberyanmar - Doughs are always tricky depending on the weather, how you measure the flour, even the brand of flour so just use a bit less water. Add the water slowly and watch until the dough holds together. If it's still too sticky, try adding a little more flour by hand before you start rolling it out. Even mine is not always the same - sometimes I use all the water and sometimes not. I hope that helps. :)
