You can make the cake even lighter by whisking the yolks with some sugar in a bain marie.

When you have a sabayon, whisk in the fat mixture, as in the video.

The reason this works is that the coagulation of the egg yolks facilitates their ability to trap air, meaning that the yolk mixture becomes lighter than if the yolks were simply whisked without heating.
