Vine will have fruit in first season but it will be weak(small berry) and unripe 100% ...(so you can not use fruit to make dissent wine), Usually we cut bunches off in early stage of fruit forming at first two years after planting, that gives plant a lot of support to grow and mature faster. So the answer is you can harvest fruit and start making wine at the third year after you planted vine.And at about sixth years vine get full potential to produce best grapes.
if you don't have metal rods you can use wooden stakes too...even if they rot in three years down the road the vine has already for med its trunk and has reached the trelis wires.
yes sure you can use wooden stakes. but for commercial growing I would recommended metal or plastic rods,They are uniform looking ,strong and flexible when you carry machinery operation such as weeds spraying,soil cultivation and also easy for trunk training and pruning to create nice V shape of the vine, And finally rods can be re-sell to someone else when vine reach the fruit wire.

How do you keep grass and weeds from growing under the vines?
