tis your opinion, but chen is a great chef considering, he uses more unusual ingredients than sakai, sakai uses his high influenced french technique and training, sakai keeps to the recipes he knows best, which is similar to chen i i always have felt that chen manages to make his changes to well known flavours best, sakai is the deco chef, with michiba the true king
