The trachea, esophagus, carotid arteries and jugular veins are all severed as to cause instant brain anoxia causing the animal to become catatonic ( or unconscious) and feel no pain. The Jewish butcher will check the blade for nicks that may impede the single swift cut, that may cause the animal to have sensation and therefore pain. If an animal is cut or killed in anyway that causes it pain (hunting , modern mass slaughter method) it is not allowed to be eaten.

Due to the debate in Australia, I have researched Kosher and Halal slaughter. Kosher rules mandate that the 'shochet' (the guy that kills the animal) cannot use a sawing motion and has to cut the neck with a single cut. In this video, the man is sawing at the neck, so I have to question your motives. There is no need to "Secretly record" Kosher slaughter. Temple Grandin wrote a report and deemed it as humane as any other method. What's your agenda?
