  • @moii Yes, you are right, other cities, countries get more snow and organize it better than we do. I lived and played through the 24" of snow of 1967 which Chicago was totally unprepared for, now people act like 20" is nothing and drive their cars like nuts and cut you off when they s/b more careful. We had a easy winter before this storm. I did not want to get into the Chicago politics side of snow removal on a foodsite and waste your time. Thank-you

  • Hey Chef, can you use white wine to steam them open instead of water? Seems like there could be some good flavor there. By the way, made your Panda spicy orange chicken wings the other night, F'n awesome.

  • I love everything but the clams.

  • I am sitting here watching in snowed-in Chicago, no supplies, no clams, no bacon but I got BUTTER. Is this serving for six people or for one ?

  • @jbadal1 I saw the whole America-blizzard-snowstorm-chaos thing on the news...

You guys should pay Sweden a visit! xD If it didn't snow like that, people would be freaked out and deprived of snow, un-snowed-in and forced to go outside... Utter chaos I'll tell yah!

    JK!

  • The last time I had Clams Casino was in culinary school. I know these are good. I can smell them and taste them now.

  • what is the sauce that you put in the mixture??

  • worcestershire sauce

  • Wow. That looks phenomenal!

  • Lovely, I watched this at 11:10 pm.

I'll be in my sleep, dreaming about eating them for Christmas Eve....

All I have to do now is convince my mom to make these for Christmas.

  • why are they called clams casino ?

  • Unbelievable experience... Garlic, butter, bacon, clams... Come on! :)

You totally rock, Chef John! :)

    This looks delicious, btw! :)

  • omggg my mouth is so watery

  • can you do the gingerbread for Christmas?

  • looks good

  • Does the rock salt actually change the flavor at all?

  • Hey chef john, can you speak louder into the mike?

  • i never tasted clams, but this recipe makes me want to give clams a shot.

  • does cooking it on the rock salt make it tast better or is it just for looks?

  • @9showoffsin1

I think it does a couple of things...looks, holds the clams in place nicely and it holds a lot of heat so it keeps the dish warm longer.

  • Wow can't believe he put in a tablespoon of butter with bacon. Believe the bacon has enough fat in it to not stick to the pan! lol

  • oh thank you ; )

    I guess that makes sense..

  • prob does the butter more for taste not sticking

  • what an amazing dish... love it always~

  • what does the rock salt do?

  • @Itsnameisgundam the rock salt makes sure the clams stay in place...dont wiggle around or flip over while cooking...

  • looks good! and i don't even like clams!

  • Bacon can make anything look fancy

  • Great video !! I've got to try that , and with Mussels too. 5*****

  • mouthwatering

  • Ah yum. I can totally impress people with that dish someday XD

  • whats the importance of rock salt??

  • there are many foodies on youtube but you are the best to watch! i made pumpkin creme brulee with your help and it turned out AMAZING! but i wish you would post the recipes under your videos!

  • wow amazing!!!!!!!!!!!!!!!!

  • Chef John, Do they call these "Clams Casino". Because your gambling your heart wont stop after eating them.

I'd really love to make this clams recipe. But I don't think I could eat all that rock salt. I'm sure thats way-over the USDA's recommended daily sodium allowance!

  • wuaw that knife is amazing 0.0

  • O_O..omg...I'm not a seafood fan (becuz im allergic to shrimp and crabs and i got a trauma) BUT>>LOOK AT THAT>>>SHOOT>>I WANT SOME>

Chef John, Could you make make our Christmas wishes come true. With a "EGG DROP SOUP" video!

  • Looks fabulous!

  • Cutting bacon on a wood cutting board...

How does one clean a wood cutting board? I have a large Boos Block board, and have been unable to find the "proper" way to clean it.

  • sponge, a lil water and soap is how i do it

  • have you tried vinegar or clorox?

  • after you've washed it with hot water & dish washing liquid, you sprinkle salt on both sides and leave to dry over night and it's ready for use the next day =)

  • mmmm as usual

  • that looks sooo good!

  • show ur face!

  • if you go to his site, you can see what he looks like

  • also his youtube icon

  • I have been watch your cooking for awhile now and I have been enjoying them! I wanted to ask... what kind of knife do you use? Do you have any recommendations for general use in the kitchen? I have hard time getting the "perfect" knife... if it exist. Thank you!

  • cutco :)

  • Very easy and delish!!!

    Thanks!!!

Do you have any ideas for a Christmas Eve???

  • Tasty!

  • garlic!!! yummy. ;]

  • " and you EAT it!"

can't have said that better myself

  • remember that line from Shallow Hal where Hal says, "Now she's eating my clam casino!"

  • LOL! I love that movie!

  • I always wanted to know..... What does cooking food with rock salt do? Well in this method, what does it do to the clams?

  • nothing....the grains are larger so it holds the heat......it keeps the clams warm for the customers...... :)

  • ohhh and presentation value as well......

  • That's a good presentation, but health wise, not so good. Too much fattening. I would probably leave out the bacon. or substitute it with leaner bacon.

  • xD Anyone who loves food, wouldn't really think of how much fat that is :P Well I know I wouldn't!

  • amazingly well teaching-concise, simple, and delicious!!!

  • to tigereye 1964, you are SUPPOSED to learn continuously in whatever you do... The greatest chefs of all time have always learned from their career, from other chefs, and so forth...

  • thank you so much! i love cooking but i dont know how ur likey sensei or somethikng!

  • what a jerk tigereye, go concentrate on golf and not all your "ladies" and leave the cooking to Chef John

  • i love the part of the video where you throw in vegies or whatever into the access oil or broth. i'm always like "no, don't throw it away.." and then i see something being thrown in there (like those diced red peppers) and i'm like "oh god, that looks so goood!" thanks chef john!! xD you are THE best cook... seriously :)

  • huh? what does this mean?

  • tigereye, what crawled up your butt? Why do you have a problem with CHEF John?

  • so you're basically saying this to all chefs, all chefs have learned how to cook from someone else, so basically they're all just cooks to you, then what is a chef.

  • HUNGER

  • do u eat it with a fork, ur fingers, or do u slurp it? What is the purpose of the broiling on sea salt or wateva that was?

  • You eat these like any other clam, no fork needed.

  • you one of the best and funniest on youtube...i always check for your new shit...love clams!

  • wow, that is fantastic!

  • ur back yay

  • my foodwish is a thick creamy new england clam chowder

  • I dribble :).............

  • lol food porn ftw

  • looks great!

  • beautiful

  • I dont eat clams, but you made me

want to try some. So good!

  • Scrumptious! My mouth is watering.

  • A would add fresh spinache,or broccoli rob, finely diced vidalia union.Instead of bacon,I'd use brachute(Italian ham?).I know it's spelled wrong.I have a dish that was inspired by me,and is also named after me. Oysters Harraway! Awesome !

  • nice looks pretty good :)

  • thats some next shit right there..........dam

  • OMFG yummmy!

  • Chef John, I LOVE YOU!

  • Ahhhhh, food porn, mmmmm.

  • looks amazing

  • oh my goodness. that looks so good!!!!

  • isn't that white dish a large spoon rest?

  • Wow! looks so great!

    thanks

  • oOh...talk about FOODPORN! sOo yummy!!

    xoxo

  • Wunderfull! Thanks much.

  • why is it cooked on rock salt?

  • I believe the rock salt allows for even heat distribution, and it also allows you to nestle the rounded clam shells in it, so they done tip over and spill their liqour/juices..

  • He makes all the food I don't like look really delicious and I am willing to try it (:

  • Brutally decadent!

  • I don't know clams taste.. but it looks delicious. thanks.

  • I bet you could charge admission for christmas dinner at your house!

  • why use butter when there's so much fat in bacon?

  • because fat tastes good

  • @elgendiking well that doesn't answer the question really, you get plenty of fat from bacon? :P

  • @hypna bacon fat has a meaty goodness when butter has a nutty taste and if you meld the flavor together it gives the dish a Variety of different tastes

  • @elgendiking Ah, that is more like it, thx for the answer =)

  • Because after hes done cooking the bacon, He uses the Butter and Fat in the Bacon for the Peppers and the Garlic(So he does not really use the Butter for the Bacon...but I dont think its hurts)

  • flavor

  • That looks really good!

  • Amazing. Clams are very expensive where i live but i'm going to try this anyway. Can you explain why the rocksalt method is used?

  • effing love crustaceans

  • this made me so hungry :P

  • Kinda slow there, Gump. (o_O)

  • mouth-watering.

  • A food to kill 4

  • mmmmmmmmm

  • it's too early for quality. the higher quality comes after some time the video has been uploaded. ~30minutes depending on video length

  • ahh, ok

  • wow, the video is processing. Why are people so dumb

  • Never seen this happen before, usually when youtube is processing it, no one can view it. So I'll wait an hour or so, and see how it looks.

  • still proccesing

  • looks delecious :P
