You are always learning something from someone else. Face it, you're not Chef John, you're Cook John. Teach someone in physical reality something cooking related or just stop inviting people to show your audience how much you don't know and need to learn.

@hypna bacon fat has a meaty goodness when butter has a nutty taste and if you meld the flavor together it gives the dish a Variety of different tastes
Because after hes done cooking the bacon, He uses the Butter and Fat in the Bacon for the Peppers and the Garlic(So he does not really use the Butter for the Bacon...but I dont think its hurts)

I think it does a couple of things...looks, holds the clams in place nicely and it holds a lot of heat so it keeps the dish warm longer.
