Lol, I made egg tarts with what must be the almost the same method and recipe when I lived in Canada - and also using the shortcut method of buying tart shells from Sobey's. All in all, it's actually nice to see someone else using a similar recipe as what I used for the egg custard.
Shame that I've now got to try to make the shells as well, now that I've moved across the ocean and they don't have the same tart shells here!! :(

using the strainer ( net thingy) is the best way to make the egg filling smooth and make sure all the chunky parts are gone. a electrical mixer will beat the eggs and mix it well be it won't have the same results i don't think. also beating the eggs with an electrical mixer is different then hand mixing. i dunnno how.. i was just told that by my mom a long time ago
just yous chopsticks or spoon or whatever to help push it through.... its best not to add the water til the sugar water part when the egg is already smooth and not chunky and super gooey

sorry for the late reply
i did add sugar to the water and boiled it so that the sugar would melt. but then you have to let the sugar water cool.

well the recipe said to bake for 45 minutes i think i'm not sure.
i messed up when i made it cause i thought the temperature was 230F but that was Celsius. so i baked it for longer then needed.
i guess it depends on the oven.
but bake til its golden brown or when the yellow stuff isn't giggling like crazy :)

but eggs will ruin the consistency of the yellow stuff ( whatever its called)
just use a spoon to try to push it threw.
if i can't go through it won't have a smooth result when baked :)

actually my mom bought them and left them for me to make
my grandfather was a bakery chef pastry guy who made wedding cakes. so he use to make the shells but i ever learned.. i just know its reallyhard
