Surprisingly, the final minigame mattered. If chuggaa hadn't won that minigame, peach would've won. As you can see, the totals for peach and Chuggaa were:

Chuggaa: 4 stars, 24 coins.

Peach: 4 stars, 17 coins.

However, if Chuggaa didn't win that minigame, it would've been:

Chuggaa: 4 stars, 14 coins.

Peach: 4 stars, 17 coins.

So it did matter, just not in the way everyone thought.

They should actually do Mario Party 8... For one, there's no Control Stick Spinning. The boards are a lot more interesting, and would actually give them more chances to screw each other over (in fact, Bowser's Warped Orbit is MADE for this!). And they could have a fourth player (DeceasedCrab?).

Also, I really want to hear Jon's reaction to getting all 1s on a Thrice Candy roll :D

If you've played it (or heard of it), do Day of the Tentacle for PC. It could be awkward to do, but essentially it has 3 people in 3 different places that you need to swap between alot, so you could have one person controlling each. Only one one problem : it takes a small while to get the people.
