Carbonara is pancetta, eggs, black pepper, parmiggiano and pecorino cheese. I'm sure your pasta is good but it isn't carbonara I know because I'm italian

This is one way carbonara is done in the US.
Yes this is not the original Italian pasta carbonara, it is simply an American version.
I have tried both kinds but I prefer this kind because it is what I grew up with. (Except I prefer it with parmesan added and no onion.)
