The monkfish tail, aka poor mans lobster, would work very nice with this recipe. Trout would work too as long as you presented it on the plate skin side down.
LOVE the coconut milk in the egg and the macadamia in panko, not too sure about the caper cream sauce (the delicatge nutty flavor of good quality coconut milk and macadamia nuts combined w/ the zesty flavor of capers, i'm thinking something a little more fruity like papaya or more alive like ginger or lemongrass in a coconut milk sauce) and why not deep fry?? if done right it results in a better and more even crust... LOVELY recipe, thank you!

@lNOMAK I think I'd recommend using it for fairly oily fish first and foremost. Like mackerel, mahi mahi, that kind of stuff. But I suppose you could use it on almost any friable fish come to think of it.

If you leave the sauce on it for a long time, it will soften the crust. Kind of like the way milk will soften cereal.
