I believe that the reason this person is using 2 needles is because a lot of beginners tend to cast their stitches too tight, and 2 needles forces it to be loose. The camera view of this video is fantastic and easy to see, however, the creator of the video really should have added some verbal dialogue to help people follow along.

It also would have been helpful as to why two needles......demonstartion needs verbal explanantion!!!

This would have been really helpful if you had said what you were doing as you did it. I guess I'm just not that much of a visual learner.
