interesting, but don't u need the upper layer (fat)? what we do is cut it in stripes and then in cubes. it's all pure fat but might have some meat as well if you cut it deep enough. then we put those cubes in a big casserole and cook it for about 3 hours (maybe more i'm not sure). what happens is part of the fat melts into liquid and fries the rest. it's a f*cking delicious stuff!!! :D
