dagny, thanks for replying. It just looked like the tool that you used in this clip was homemade and you were able to manipulate the blade to suit your needs. The slash that you made with this tool was excellent. Hence, which prompted me to ask how you assembled the tool. I did get a Lame from Kingarthur.
they were purchased (i believe you can buy them online from king arthur flour) but if doing at home use a razor blade or very sharp knife and hold at an angle. lame just creates the angle for you... hope this helps!
You do realize, don't you, that you didn't catch the actual scoring, because your arm was between the bread and the camera?
