  • Actually the best way to butterfly ANY piece of meat or just cutting the whole thing lengthwise right through to the end is chill the meat in the freezer until very cold but not frozen solid, about 2 hours. Much easier to cut than it being soft like the above video shows.

  • There is another way to butterfly which is much easier. Get the breast in between 2 pieces of cling wrap leaving some space all around the breast and use a malet or if you dont have one of those, a rolling pin and you hit the breast until it is nice and flat :) Thats how i do it because my knife skills arent great
