i tried this but my curdles are too soft and when i pour the whey out they all just melt and mix back in with water any idea why? also i used a very fine cloth and got the cheese out but it comes out like cream cheese instead of mozzarella plz help
I notice that many other videos show people using calcium chloride do you even need it? second question is . Will the junket rennet tabelts work our do I need different rennet? Thanks, Great video!
I am defiantly going to try this, but one thing I don't have is rennet, and I herd that you can use lemon juice or white vinegar as substitutes is that okay for this recipe?
Considering the cost of milk and the amount of cheese you get I wouldn't expect this to be cheaper, but it is so much better. I am going to try it. I'm told you can also add the whey to homemade breads, soups - basically any where you would add water. I'm definitely going to try this.
/sigh at all the people scared of microwaves

Why would you make sure that the water had no Chlorine and then zap it with microwaves???? Not going to use this method! Sorry!!
palmandre09 4 weeks ago
@palmandre09 he said chlorine would "kill" the enzymes (rennet). the microwave has nothing to do with enzyme's activity with the milk.

instead of citric acid can i use white vinegar?
Moharani21 4 months ago
Why use rennet? When you put the cheese in the microwave it kills all the enzymes you just added....
mrschristinemocek 4 months ago
@mrschristinemocek i think the rennet and citric acid is responsible for the milk to curdle. the rennet has done its job before the microwave step.

Can i use milk bought out of the grocery?
Can i substitute the rennet and citric acid for just plain vinegar?

My curds all sink to the bottom an end up in one clump. Is this okay or did I do something wrong?
