Sorry, my last comment was wrong. its actually a supersaturated mixture, which means there is more sodium acetate disolved in the water than there is supposed to be. once the solution is stimulated (poured) the sodium acetate begins to separate from the water like it should have. and as it releases from the bonds energy is released in the form of heat.
Geek alert: it doesn't actually "freeze", if any of you have actually used the hand warmers involving this type of reaction you will know that it produces heat. And you will also know that you need to snap a little metal tab in the handwarmer to start the reaction. In this demonstration the two reactants are mixed in the bottle and when they hit the table there is enough force to start the reaction.
It won't explode, but it generates a good amount of heat and is mildly alkali so it might burn you skin. Not too dangerous, just some basic caution like goggles and a place to rinse off quickly.
