@flasp11 The water goes away through cooking and stirring and being absorbed by the tvp. Adjust the amount of water you use to get the right consistency.
If you're referring to a substitute for tuna salad, for instance, just add the re-hydrated t.v.p. to replace the tuna and use the rest of your regular ingredients and seasonings. It won't quite taste like tuna, but you can add some lemon juice and sea salt for added flavor; the texture, however, will be similar to tuna. Thanks for the comment!
One example, depending on what you want to do with t.v.p., is adding tomato sauce. Barbecue sauce is another good one. I cover this in my book "The Practical Vegetarian" and I've received a lot of positive feedback from people who tried my recipes.

it's ok, but I will say that you have to rinse about 3 times and that will take the odd taste- then you flavor it and it has a great taste then you cant tell the difference. be patient and willing to learn and you will love tvp

How do you get rid of the water after cooking? I always pay attention to the very small steps on recipes.
To add a fish flavor, I would boil with seaweed...just an idea...need to give it a try.
