I have studied a lot about the battle of Cannae, you are correct that the Carthaginian cavalry were superior (better trained, armed etc) but they also had more cavalry than the Romans.
All of Hannibals heavy cavalry massed on the left and destroyed the Roman right, whilst Numidian cavalry skirmished with the Roman left. The heavy cavalry then rallied and attacked the other Roman cavalry flank routing all the cavalry allowing flank and rear attacks on the Romans. Hope this information helps.
i know of Cannae and another battle were almost 100,000 romans die in another battle i believe the 2nd century B.C.E the name of the battle escapes me.
