  • I grate firm tofu to substitute for the cheese as I am very sensitive to the casein in the milk or I've used vegan cheese from he health food store and it is very good that way too. Self rising flour: is that Bisquick?

    Self rising and bisquick are different but for this recipe, you can use even bisquick. Thanx for sharing...

    Usually to make them crispy, they are dipped in eggwash, and then coat with bread crumbs and bake. But since I do not use egg, I made with self rising flour and my EPP were so crispy...

  • Hi Bhavna,I did make the recipe but the one thing I noticed was that my eggplants drank most oil while I fried them. I did pat them dry before frying. Pls help

    Did you make batter from my recipe? If your batter is perfect, it should not happen.

  • @sundari2009 Something you can do to prevent this is to cut the eggplant then salt them and let them sit for an hour. This will draw out some moisture and will also prevent the eggplant from soaking up the oil.

    Usually, for this recipe, eggplant is already fried so I just bake till cheese on the top is melted. enjoy!

  • Does the self-rising flour have a big effect when frying compared to all-purpose flour? I've never tried it before, but haven't quite got battering down the way I like it yet.

    Yes, self rising flour makes this dish crispy and fluffy as well. But you can use all purpose flour if you want to. But you will have to add baking powder, oil and desired spices. Enjoy!

    Yes, you can bake. You can use beaten egg to dip eggplant slices and then dip in bread crumbs and bake and enjoy

    Thank you for sharing. Yes, traditional is always great. It's like "old is gold". Sometimes I do give little twist even to traditional recips, but do not try to change it in whole. Keep enjoying.

    Yes, Sort of. Salt and baking powder is added to all purpose flour. so if you want to make self rising at home then here is the recipe

    *4 cups flour

    *2 teaspoons salt

    *2 tablespoons baking powder
