I like the use of the pastry blender. I've also used a cheese grater to very good effect; it allows you to get a very finely grated tofu texture.
As well, I heat the peanut butter a little and it makes it easier to integrate into the dish.
Finally, another nice way to use this dip is in a rice paper roll with some lettuce or other sliced vegetables (like you're using). This works great, makes it much more friendly for serving, and keeps thiings light and tasty.
Thanks! No, the ginger is pretty mild tasting in this recipe. A perfect balance for the other flavors. Use any kind of smooth-style natural peanut butter.

I made it - delicious, good job, thanks. But the rinsing of the Tofu in case the packaging imparted flavors!? And then add ginger and garlic and soya and saracha hmmm. I'd skip the first step and save the worlds water and trees (paper towel) and try not to feed your own privelidged white woman neuroses. My nubian friends howled at the first step!
i never rinse my tofu either, usually just wrap it in paper towel and press it between two plates (with a kettle resting on top for pressure) while i cut up any veggies i'm using, and by the time that is done, the tofu is nice and dry
I find your comment to be pathetic. As a women and a vegan your comment is negative, unfounded to great ethical vid. If you live in a America you would know that all women, white and black at least 50% live below the poverty level. And having one of the top 100 lawyers in the USA and a senator, not even given half the dignity by the media to become the president when many other countries have for years.
