They probably decided not to use Saria's Song as a subtle way of telling us this isn't the Hyrule of old. As Wind Waker showed us, that land is gone forever. There's no Triforce, no Ganon and no Master Sword. This is a whole new adventure for our heroes. Other examples of this include a new Hyrule Castle theme and an Overworld theme unlike any in the series so far.

I absolutely hate how the game forces you to go and find Ferrus to learn how to get past the blizzards protecting the Snow Temple. On my second playthrough after I finish the duet with Steem, I immediatly went and traced down the route to the temple from my other save file before heading out. And then just as I was halfway to the temple, I was blown back. So then I went to hunt down Ferrus to show me the way--AND IT WAS THE SAME ROUTE! I felt like blowing him up with my cannon right there!

This is nothing new. In many games you have to trigger some events before you can get through with the right solution, although you might already know it. It can get annoying but we have to swallow it :D
