  • I didn't know about using the cornmeal to prevent sticking before cooking. Excess flour gums up the cooking water and its nice to know there is an alternative. I also use half unbleached flour and half semolina flour, it makes the dough much easier to handle in the rolling and cutting process. Kudos, great video.

  • Pulled out my grandma's (very) old Imperia pasta machine today and was DELIGHTED to find this video on how to use it!! (my memory isn't good enough to reach back 30+ years to when I was a kid helping her...and I actually only remember helping hang the pasta over the chair backs in the dining room. haha)

  • Hello, sorry if this is a dumb question. Can you whisk the egg in a bowl and just pour it in in the well of flour, or, put the flour in the bowl with the egg then whisk it? Will it work? I haven't tried it because I don't want to waist my ingredients.

  • @silentassassintados Not a dumb question at all... Yes you can mix the eggs, olive oil, and salt in a bowl then add in the flour. You will need to knead in on a board though...

  • use fridge cooled dough and put the cutting attachment in the fridge too. It is better to have the dough stiffer rather than softer, then flour between rollings and especially after final thickness is reached, before cutting. will not stick, period.

  • Well made video and very watchable - but I would suggest you let your pasta dry for a while before cutting +5 mins is way too long for cooking. 1 min max even if finished pasta is dry and firm. Well done tho ;-)

  • i just bought a pasta machine, i tried the fettucini cut pasta but i cant for the life of me make it go through the spaghetti side of the machine. it gets stuck every time.. what am i doing wrong???

  • @ishoa1 might want to try and flour the pasta sheet before you try and cut it - and remember to not stop turning the handle while you're cutting the pasta - keep it moving until you are through the sheet...

  • @nikkomyers Hello. thank you for the reply. I can do the pasta sheet no worries and fettucini cut pasta. just not the spagetti. im not sure if the pasta is too hard or soft or thick etc. I have tried everything. its so hard.

  • @ishoa1 Here's what I would suggest then - roll out one piece of your dough at a time - I would take it to the smallest setting - dust it with a bit of flour then cut it straight away - try that and see what happens...

  • Used mine tonight and i love it.

    The first time i used the machine though i was so bummed out because it ruined my dough, there were all these metal bits in my pasta from the brand new machine.

    but it's flawless now and love making fresh pasta and fresh sauces to go with it :D

  • ....hahahha homemade pasta ....you say that you have to cook it 5 minutes...45 seconds to 1 minute is how long you should cook it...lol

  • do you have to let the pasta dry before boiling it if not will it become soggy?

  • @fordairport Yes you should let it dry for a bit, but I've used it as soon as 5 minutes after making it.. It cooks quite quickly...

  • Can't tell you how thankful I am that you posted this. I was the lucky recipient of a Imperia machine this past Xmas.

    I LOL'd when you mentioned having the eggs run all over the counter -- that was my first experience.

    Is the cooking time 5 mins for undried pasta? I've read when it floats to the top of the water it's cooked but I find mine floats in a matter of seconds :-)

  • @MarvinAndroid69 It sure doesn't take long - I always just pull out a strand or two and try it... That's the best way to tell when it's done!

  • @hapzone Thanks... And you can let it dry out overnight but it is amazing when used right away... It never makes it that long in my house - when I'm making it everyone comes home for dinner...

  • Thanks, just became the proud owner of an Imperia pasta machine after geting sick of dry pasta and supemarket "fresh" pasta. Really glad to see how its used as I was a little unsure!
