  • its best to leave it in the pan and cut it up then pull them out one by one

  • i use unflavored gelatin mix, and instead of a knife i use kitchen scissors that are covered in powdered sugar or icing sugar....its easier!

    Corn syrup is indeed hard to find in Europe but other kinds arn t.

    I was a bit worried that it will not work because honey can t always take high temperatures.

    Using honey is also a bit expencive but it gives a nice flavor i think.

    A good quallity syrupe can be expencive too.

    Especially when it is hard to find or get.

  • @AZA417 It shouldn't matter if you use granules or sheet; the process should be the same I think.

  • @ecos889 There is, but I always seem to end up burning my fingers! Google 'sugar syrup thread desserts' and you should find an article on about com that describes the stages.

  • it would be much easier to remove the marshmallow if you use parchment or baking paper on your dish, making sure it's big enough to hang over the margins of the dish

  • instead of gelatine you can also use "agar-agar". i'm gonna try making this. thanx

  • A SILPAT (silicone baking mat) might make removing it from the pan easier. The mixture looks pretty thick, so I don't think much would run under the mat.

  • hi, i jus have one question.. i use the gelatin in various cookin stuffs, and the one that i use is a beef gelatin which is halal.. but the issue is , whatever i add gelatin to, the strong smell lingers... i am not able to remove the strong smell out of the gelatin.. where am i goin wrong?? by doublin my vanilla essence or other smell enhancers would the raw smell of the gelatin go away,?? even in ur other vid on trifle puddin u jus added lemon juice to the gelatin mixture for makin jelly..

  • @shakeenida Interesting.  I've never noticed this problem when I've used gelatine - usually the smell subsides. Are you using the right amount of gelatine? :-S

  • I want to avoid using gelatine, but I know agar-agar may end up working against me.

    When it starts to cool, it becomes very firm and stiff. Usually you'd end up using this in making jellies, which are known as agar-agar also. So, would konnyaku powder or konjac work?

    I allready know why my marshmallows goes fail. because i have no corn sirup in there and i don't use the Thermometer and the Agar agar have not the same properties like gelatine. agar agar is more slimy and gelatine is more like glue what holds the sugar together. After doing some research i found out that corn sirup have many names in germany. I buyed the "heller Sirup" from grafenschafter. I will buy some gelatine from orental shops and i try it again

    1.why i must make it with corn sirup because i'm from germany and i can't get it.

    2. can i replays gelatine with agar agar

    3. make some marshmallows with agar agar and without corn sirup but they were not fixed mass but rather fluid do you know why?

  • @musabolonia I have difficulty finding corn syrup too. I use a pancake syrup which is 95% corn syrup according to the label. You should be able to use agar agar but I have no experience of using it to make marshmallow. If your marshmallow was still fluid it suggests you didn't use enough agar agar.

    IN FRANCE Asian markets often carry corn syrup cheaply, as it’s used in Korean cooking. Two stores in Paris are Ace Mart (rue St. Anne) and Tang Frères.

    IN GERMANY

    you may have to use "Rübenkraut" or "Zuckerrübensirup"

  • @Yusra1001 You can buy it online. I believe you can also use Agar Agar or "vegetarian gelatine", both of which are more easily available.

  • @nabbi101 I left mine in a coolish room away from the heat, but I could have put it in the 'fridge too.

  • fabulous! though not muslim myself, some muslim friends of mine avoid using vanilla extract (which is basically a distilled alcohol infused with vanilla beans). just wanted to mention this since I notice that in other recipes you avoid using wine for cooking.

  • @sfg078 You should tell your 'Muslim' friends to read what their prophet said about drinking alcohol and things that contain alcohol ;) To be exact, he said, "what ever intoxicates in large quantities is forbidden in small quantities" - now of what i know if you drink 50 Liters of vanilla essence you still wont get drunk ;)

  • @VirtuosoX1 actually, vanilla extract is alcoholic (having roughly the same alcohol percentage as vodka and other hard liquors)! this is why many muslim friends of mine avoid vanilla extract!

  • @VirtuosoX1 also, it's been known for kids under the legal drinking age to get drunk off of alcoholic things in the kitchen such as cooking brandy and vanilla! i assure you that a few shots of vanilla WILL make a person drunk the same way any hard liquor would! i also checked the back of my vanilla bottle at home just now: "alcohol 38%". best wishes!

  • @sfg078 Here in Australia we call it Vanilla Essence, which doesnt intoxicate, i assumed it was the same thing where you were at? i did abit of googling and found there is a difference in Extract and Essence, Extract has excessive alcohol 38% or more as you mentioned, Essence i believe is the one which is ok to use since its alcohol level is really low and can not intoxicate.

  • before you let the marshmellow mixture cool in the pan, could you pour it over an already made cake as a thin layer of marshmellow icing?

    Also, before it sets, could you sprinkle on little bits of things so they set on the top?

    here's a little trick for preparing the backing dish : grease the backing dish with some sunflower oil, line with parchment paper and grease again,then sprinkle with icing sugar.

  • I remember when I tried to make marshmallows at university last year. I didn't have a electric whisk or a thermometer I could use so it was a bit of a disaster. They came out like jelly. But the strange thing was that they tasted just right all the same. A pity I couldn't convince any of my friends to try them XD

  • Yes, I think you can. I have a Jewish friend who uses agar agar instead of gelatine.

  • Not in this recipe! You add the gelatine to cold water and let it "bloom" for about 15 minutes (about the time it takes to make the sugar mix in the pan)

  • Not really if you add another flavouring like vanilla or (as Umaar suggested) Rooh Afza!!!!

  • If you can't get corn syrup you might be able to get high fructose syrup or, like me, pancake syrup (which is coloured and flavoured corn syrup). Check the ingredients on the bottle.
