You never put meat into a cold pan and then turn the heat on. Use some olive oil, in a hot pan and cook the mince on a very high heat, quickly. It will brown nicely in 10 mins, the stuff this guy drained is perfectly good for frying off your onions after removing the meat. Then do all the rest before re-adding the meat and any accumulated juices.

Yes, salad does go well with chilli, I've even had it with mashed potatoes instead of rice or bread. Brilliant.
@billpg Mexical chili uses Mole Powder, not choclate. Mole is the raw ground coca bean mixed with ground spices. Also "Chili con Carne" (Beef with Chilies) does not have beans. "Chili con Carne y Frijoles" (Beef and Beans with Chillies) does.
@CaseDesignate Lived in mexico for 3 years and they all put beans in their chilli. Not always kidney, sometimes black or navy, but there where always beans in there. Chocolate powder is less common, but it is used to add some bitterness

The story behind the onion clip was quite complicated, with several re-takes. Two of my onions turned out to be rotten once I had cut them in half.
I thought most people can chop an onion, so I just took it out as I needed to bring it down to 10 minutes.
