  • Someone asks why so many methods...

    It is really only 3 parts;

    The sauce;

    Making the sauce is the important part. You make a rue from butter and flour as a base for many sauces but basically a white sauce. It will thicken up your cheese mixture nicely when you bake the mac and cheese.

    The Cheeses;

    This is personal preference but usually starts with sharp cheddar. It's nice to add other cheeses to give smooth texture and mild flavors. Mix with your sauce.

    The noodles;

    Boil, mix 2gthr and bake.

  • To the creator of this video:

    Expertvillage has a bad reputation for posting videos lacking in quality information. They also split the videos either to get more hits or gain more advertising revenue.

    I'm sure you get a cut and can understand that. However, I would encourage you to not post videos through ExpertVillage.

    I generally avoid their posts because of the general lack of quality. You clearly know what your talking about and shouldn't be associated with them. Great video.

  • I got it! For Thanksgiving I am going to make a white sauce (white cheddar) and an orange sauce (extra sharp, cheddar, colby) for my mac and cheese and then add some cheese on top of the pasta! This year is gonna be really good!

    it called a rue.... flour and oil, add milk, then whatever you want for your basic white sauce...

  • Yeah, chef john from foodwishes says use cold milk.

    But from experience (my first lesson with a restaurant chef), use hot milk. And stir like crazy.

    Man oh man, was the mac and cheese good to eat.
