What a beautiful story.

How playable is the keyboard?

I only ask this because of the mouse nibblings.

The keyboard works fine, the nibblings don't go too deep, but the piano has a wooden harp and cannot hold its tuning for very long.  Before metal harps were developed, pianos had to be tuned much more frequently.

Wow!....150 years old..beautiful to see its triumphant return, and what a tale! mice ate the keys in a hay pile....

I've tuned a handful of these Steinway square grands, even done some small repairs on them, but they are intimidating. Bravo on the rebuild.!
