it looks mostly like an indian curry but he puts lemongrass (thai curry) and soi sauce (chinese ingedient, indians use salt, thais fish sause 'nam pla'). he is french trained but would he adultrate a classic french dish the same way? at least he didn;t use olive oil like many westernes do when cooking curry, mustard oil or vegtable oil would be better. you dont drink wine with spicy curry water, fruit juice or milk based drink better. he may be a god at cooking but not at asian cooking.

Star anise, kaffir lime leaves, cinammon stick, and turmeric (turmeric not only in the paste, but also once more in the curry itself. Also fish sauce and soy sauce.
