anything can be a consomme jelly. take any stock you want wether itbe meat of veg, fish, or whatever. then add gelatine to it. now you have consomme jelly or aspic as they say in french

actually, as far as the consomme, I'm pretty sure it's more specifically seafood, though I've heard of a vegetable variety.

I believe it is meat stock, since it jellfies a lot easier then vegetable stock.
