Just flick up the Wii Wheel/press the button used for performing wheelies just as it's about to hit and you should create a forcefield that lessens the damage done by POWs. You still drop your held item, though.
It works with both karts and bikes. Takes a bit of practice, but it's well worth it.

Whut? Noooo, Female Miis, Male Miis and all middle weight characters can use it once you unlock it.
...As to how I unlocked it, had something to do with Mirror Mode, I think. I can't remember how I unlocked half the things I got. Sorry!
