  • I think it relevant that as I'm watching this video that a video for "How a diaper is made" shows up on the right

  • once the milk is curdled with rennet and the curds are separated from whey then you cool the curds and then you shot apply hot water that contains the right amount of salt (like the ocean salt) but it should be reaally hot and then you try to take all the lumps out once its soft, thats how you make mozzeralla

  • You don't by law need gloves to make this cheese( see Paula Lambert vs. the State of Texas). Reason being the water is over 161F which would kill the bacteria on his hands.

    Been through it all. Fuuny thing is that most FDA/USDA workers don't even know that.

    You see the gloves in use after the product has cooled.

  • This is cheap pizza cheese. Campania uses Water buffalo milk but keep in mind that the water buffalo is not native to Italy but from Indonesia. Italy made mozzarealla from cow's milk for centuries before they made it from Buffalo milk.

    A good Mozzarealla maker can make a cows milk Mozz that will rival or surpass a bufala mozz. Bufala mozz is also more acidic . They are both different and both fabulous when made by the right hands.

    I have been making Mozz for 44 years and won several awards.

  • Many countries brought them over and now have their own water buffalo. Italy did it centuries ago so the water buffalo is not new to them but not native to them. Just like a tomato. The tomato is also not native to Italy although they are famous for tomato dishes/sauces.

    You can't import the milk so you would import the animal and there are many strict laws about bringing any animals not native to a country into a country.

    Look up "Australia's Cane Frog problem" and you'll see why. Thanks!-:)

  • Why sarcasm? I did several articles for the "Nibble" magazine, I was on TV several times. It's interesting and we always made the real deal in front of our customers. Many stores in NYC still do, We still do in Florida. I also did classes for the largest family owned business in the USA ( for food) called H.E.B. and also Whole Foods Market.

  • Proper shape... American mozzarella sucks! Mozzarella is a very soft cheese stored in liquid in the form of balls... I grew up eating this crap, I had to come to Germany to find out what real mozzarella tastes like, fucking good, this stuff is flavorless in comparison and the texture is shit.

    For those that don't know what real mozzarella is: it is a very fresh cheese (it's life is ideally about 48 hours) with a very milky taste, and it is very soft and almost gooey.
