Betty, did you let the fresh cut fries sit in water for a while before you took them out and dried them? Also, your recipe seems a lot better compared to others that recommend blanching fries, cooling them and recooking them at a higher temperature.
@MsDoofus92 For the sake of convenience I usually slice the potatoes and let them sit in water while I am preparing the oil, etc. Then I drain off the water and dry them with paper towel and they are ready for the hot oil.

I actually deep-fry using a Chinese wok that I can easily tilt, just a bit over the stove. This lets me push the 'completed' pieces off to the 'dry side' and let much of the excess oil drip back into the pan itself. Some advantages are that I use/waste less oil and can quickly control the heat if it gets too hot.
Anyway, very nice fries... thick-cut, and with the skin still on 'em. Just like at my favorite cheese-steak joint downtown!

u know i found out that u could double fry them and it will turn out more crispy and fluffy in the inside betty. oh and it would absorb less fat if u put them in a bowl of ice cold water for an hour before double frying them.

The only down side is that only the first batch is great. The rest of the fries then get cooked the traditional 2 fry method. They're still good but not as good as the first batch. Gold potatoes are recommened though. Google "Easier French Fries" for the Cooks Illustrated cold method.

I totally agree Betty, frying at home can be made just a touch healthier just by using the right temperature oil and sopping up any excess grease that comes off the food. Thanks for the Fry Daddy review -- I may bite the bullet and get it.

I rarely do deep-frying, but I did the French fries and also some hush puppies, since I was doing a catfish dinner. (I will be uploading those tomorrow.) The fries and hush puppies were not greasy at all! I plan to deep fry sweet banana peppers soon--that's a local thing around here! Thanks for noticing the rainbow, and your sweet compliments!!! My husband didn't notice it and wondered why I had stuck a picture of our deck and backyard at the beginning of the video! @aleaselleanica No, any oil will work. I like peanut oil because it has a high flash point and won't smoke and burn as easily as some others.

oh theres isnt one of them where i live... and i cant seem to find any peanut oil around here in la mirada...
does peanut oil make that much of a difference on making fries. cuz ive heard that its the best
