Why did you have to cook them first?? Is it so that they would dry faster? Also, I think you should probably keep the skins on, since they have most of the nutrition in potatoes.
Curiously, What is the brand name of that dehydrator? Are you happy with it? I have a circular one but really like the look of the one you have in your kitchen.
LOL, you have way more energy than me. I just buy the potaotes by the 25 lb bags (that's after they are dehydrated) for like $28. Then I repack in mylar. I dehydrate about 45 lbs (pre dehydrate weight) of veggies a week. I avoid potatoes :) You can keep the skins on, They are really nutritious. They may come off when dehydrating, but just toss them in your storage bag.
Double bag or you could peel your taters then cube them boil them mashem place them to desired thickness with 2 plastic sheets a rolling pin and a surface on either side to guide the rolling pin to prevent over squishing? Then cube dehydrate them on plastic sheets? LMK if that works.
@cdltpx I got it use a cookie sheet and a rolling pin with mild presure (don't want to flatten out your pan). This would allow less handling faster cook time more uniformed taters less likelihood of bag preferation.
I grew up working in our 1/4 acre garden. My grandmother canned everything we ever needed. I loved her new potatoes and green beans canned together. We even made our own ketchup and mustard.
BUT - it's the 21st century...Freeze dry everything you can get your hands on. Buy in bulk (50lbs of taters for $15 - wow) while the prices are low and have that vegetable on your shelf while watching for other bargains.
Put as few extra bags aside for an elderly neighbor or to barter for added variety.
@NeoPrepper I wish I had a vid for ya but we didn't have such things in the 50's and 60's. I'll be making a few vids this year on foods in nature though and I'll gladly share. With the economy going into the toilet, food prices on the rise and the passage of S510 making it potentially unlawful to grow a garden it's a good idea to re-learn the old ways of putting food on the table.
This saves so much money versus freeze dried foods. The storage time is shorter but you can always rotate out. 5 years tops is what I would go for with dehydrated foods. Don't forget to label.
@brooklynprepper I find it does. My boyfriend taught me that little trick, and he knows his way around dehydrating. It works. I wrote an article on it, if you want I can give you a link to what i have done?
I need to do more hashbrowns....I have a hashbrown deficiency...LOL I hope they washed them at the Oreida plant I don't want any fornicating bugs in mine either ...LOL
great ideas - thank you!!

Hey Brooklyn, my wife picked me up a vac sealer..I've been a sealing fool.
I am working on the dehydrator next.
The bags I make from the rolls always leak because they get a crease..maybe I'm being to cheap with the amount of bag I leave on top.
For all you guys and girls, I was at Target today, they have the seal a meal bags on clearance and the machine too. Maybe at your Target its the same.
I got a few boxes of the bag rolls.
Hope they work in the Foodsaver brand.
