Chef thank you for the great falafel recipe. Made it the other night for the family. I have never made falafel from scratch but it was easy and delicious (no more box mix for me). The family loved it. My 9 year old son wanted it for dinner the next night as well. I will be ordering your cookbook soon, it's all ready in my Amazon shopping cart.
You are welcome. Traditionally, skinless fava beans are combined with the garbanzos...but they vary so much from market to market that I decided to leave them out. The flavor and texture is still crunchy and delicious. I also love falafel sandwiches...it is one of my favorites.
I am glad you are enjoying the recipe...I think they are delicious with tzatziki sauce (we call that laban bi kyhar) they are also delicious with tahini sauce...sahtain!
I really am surprised. I have never had that problem. One thing for sure is that you really do not want to boil the beans...it introduces too much moisture into the mix. Please...try it again and soak the dry beans over night. The next day follow the recipe instructions...making sure that all the ingredients are free of any excess moisture. You really should have no problem.
Mine fell apart too while frying. Why is it so? I did everything step by step except since I didnt soak the beans overnight i soaked them for 3 hours and cooked them a little they were soft but firm.

They should not have fallen apart...a few questions. Were all the veggies and beans free of excess moisture? Did you "test" the size of the ground mixture of all the ingredients...did they hold together? Finally...did you add too much baking soda? That can make the mixture break apart. Try it again...it really should work.
did it again, & it turned out great. this time I soaked the chickpeas overnight, and added the spices/flour mixture AFTER the mixture of chickpeas, onions, parsley.
We did it! What a great teacher you are! I made a double batch (hoping to freeze some)...no such luck. My boys were breathing down my neck waiting for the second batch to be fried. Your recipe and methods produced Falafel that riveled any I've ever had in restaurants. Thank you so much!

Thank you for showing me how to do this! My family loves Falafel and the first time I tried to make them, they TOTALLY disintegrated in the oil - totally gone! I had used canned garbanzos and had not taken care to dry any of the herbs. I thought that a little moisture would help them hold together! hahaha When will your web store be reopened? I'd like to purchase your book and a Falafel mold? Thanks again...
Wow, your falafels look very nice and green, way better than what comes in the store bought mixes. I like to dip my falafel in greek yogurt but I will try it with that tahini sauce you made.

Thanks...I love falafel and the nice thing is you can make them in advance...freeze them raw...and fry them when you want.
