Two things: Firstly, they're Matt's lyrics, so he can sing whatever he wants (and he covered it up well, anyway) - he often changes "should"s for "could"s and other similar words. Secondly, as I have a son who is a cellist (the large instrument in this video), I am assuring you all that the string ensemble were definitely playing (when they pluck the strings like that, it is called pizzicato)!!
