It's German latin. Franz Schubert was German and so this is how it would have been pronounced when he had it performed. If it were Italian latin, it would be pronounced the way you demonstrated. There's even a french pronunciation of latin that you can use when appropriate.
That's not necessary true. Latin has two kinds of pronunciation: one says G like General, the other says G like Gravitate! One reads "coelesti" saying c"OE"lesti like two different vowels, the other like an "e", and not like "oe".

Point of clarification, I meant apostate to be a lapsed Catholic. St. Agnes in St. Paul MN will be performing this on May 25th.
