What the woman says about rabbits stretching their legs backwards like that is perfectly true. It's part of their hips' normal range of motion and a very common position for rabbits to lie in when they're very relaxed or napping.
The rabbit doesn't look hugely stressed to me. A bit irritated maybe (ears back in some places), but not really scared, at least as far as I can see... She's not trying to run away or struggle, even though this has happened to her before so she knows exactly what's coming. My rabbit looks a lot more scared than that when I hold her to cut her nails.

It would be the equivalent of us getting a hair cut, and vibrating massage all in one. They are breed to have long hair like that and it must be cut, otherwise they would overheat and faint or die. This rabbit has been through this many times, she is not stressed at all. She even appears to be enjoying it and this lady talks to them to help with keeping them calm.
The shaving was great for the rabbit in the end...But what a horrific experience that would be for the rabbit tying up his paws...turning him on a metal machine upside down around and around....the huge snappy scissors..the loud "shearer"....i would HATE it.

Also, the rabbit doesn't appear to enjoy it, but it's not protesting more than usual. No rabbit ENJOYS being shaved, having their nails clipped, or being taken to the vet/examined. However, for a house rabbit, these are all required for optimal health. In the same way, most kids prefer to eat junk food and play games all day, but is that best?
What a great invention that holder is. the woman is so gentle with the rabbit. It seems as though the rabbit is actually enjoying it! Probably really glad to get rid of all that hair.
