As for the air flow, the air valve is still in place from the original accordian, and I created the right amount of leakiness so that it's fairly natural feeling as with a normal box.
I am currently in the process of building a midi accordion myself, and I have been looking at your project a lot for inspiration.
How did you manage to make the bellows feel natural - if i understand correctly you have none of the old accordion mechanics left inside, right? Do you have some sort of valve tomake the bellows move?
That sounds better than the new Roland, and it's a lot smaller too..

how do you tell the pic chip how much air is flowing/in which direction?
how different does it feel to play than a normal box?

It uses electronic pressure sensors to detect higher or lower pressure than atmospheric. It doesn't use a PIC, rather an ATMega168.
It doesn't feel much different to a normal box.
