  • @biguglygadgie out of the jar only as long as bacon normally would. One of the things I have found that if you store any leftovers in a canning jar in the fridge it increases the storage life to 2-3 weeks instead of 3-4 days. Blessings!

  • I just opend a jar today baked it in the oven at 400 for about 12 min. It was good...Paula

  • @Allen2045 I wonder if you can save the parchment paper in a baggie put in the freezer and use to greese pans or season castiron skillets?

  • This is not a safe thing to do at home. Commercial canners can safely do this because of high temperatures. Home canning just doesn't get the high heat needed to kill botulism spores. If you do this at home you are taking chances of harming yourself or others. Other types of meat are safe to can, but not bacon. Even though this may have been done 'for 30 years' by your grandparents or others, just don't do it now or you are risking your health. Just wanted to put it out there for your safety.

  • @RILEcuyer im sorry but thats a very unrehearsed statement.. the spores will be killed at about 120C and commercial canners need only hit that for 3 mins. BUT 10PSI is not enough 15PSI is the standard for commercial canneries (hits 121C). i can at home but even though im very close to sea level i always use 15PSI.

    The type of product does not change the risk, and yes home canning can get to the right heat BUT it needs to be 15PSI to get to it.

  • Question - I see a lot of bids where people are cutting the fat off various meat before canning so it doesn't go rancid on the shelf, what keeps the fat in the bacon from going bad?

  • @gingergargoyle taking the fat off meat extends the shelflife. As for bacon I still haven't determined the maximum since the canning of bacon was my first. I have only ever had peanutbutter go rancid. I only purchase olive oil in cans and never any meat go bad except store canned. We shall find out together how long bacon can store. Blessings!

  • Thanks for the vid. I can everything, but haven't tried bacon. When we get a pig butchered, you know there really isn't much of it so it gets eaten pretty quick. But I am going to try this. I wanted to know what to do with it outta the jar & you did a great job in letting me know what happens to it!

  • I canned canadian bacon today, and whole chicken but I couldn't fit the chicken into one jar.

  • @xebec1958 Great job!!! I would guess it depends on the size of the chicken. I can usually get 2 thighs, 2 legs and 1 breast into a quart jar. Then I put a couple of breast with bone removed in pint jars. Blessings!

  • @BexarPrepper yes thats about the amount of chicken I could get into the jar. I really love the taste of canned chicken and turkey. I don't really care for the taste of the canned Kielbasa, but I'm sure it will be fine in soups or stews. :)

  • @xebec1958 We like to fry our kielbasa so that's what it taste like when it comes from the jar. It is just another option not necessarly to everyone's liking. But you are so right about the chicken especially the taste of the breasts so tender and juicy. I don't cook fresh chicken much any more. Blessings!

  • @paidskn1488 Alot longer than it will stay on your shelf at least that's how it goes in my house :) I havehad meat if processed properly were still good after 15 years. FDA and USDA I believe say 3-5 years. Blessings!

  • @BexarPrepper The military in Norway made canned food for the soldiers in second world war and kept making it for the soldiers about 20 years after. The food was mostly rice, peas, pork and beans. For about ten years ago they still had many thousands of boxes left, so i bought a lot of them. The oldest one i had was from 1952 and was still edible and good 50 years after. :)

  • @jenn011754 They would be like any other leftovers. Katzcradul showed a great tip that if you put your leftovers in a canning jar in the fridge they can last up to 3 weeks. I have done it and it does work great. Blessings!

  • @boredparamedic937 I don't see it going bad as long as I processed it properly it will get eatten long before it goes bad. I try to make sure I rotate everything about every 6 years. Blessings!

  • I am curious,I have raised pigs and made my own bacon and also had it smoked at the butcher shop.When the butcher injects the liquid smoke it tastes great in the beginning but once frozen the smoke taste weakens almost completely after about 6 months in the freezer.I have never canned bacon and am wondering how does the smoke flavor stand up in a sealed jar after 6 months?I am glad i found your utube.Thx.

  • @toppfuel I'm not sure maybe you could do a comparison for us that would be fantastic! Just do a slide show if you don't have a video camera. (just words) would work also.

  • You made my mouth water! Good info. I just picked up my smoked meat from the butcher shop today. In the future I will di it all myself and I do plan on canning the biggest part of the meat. Stay safe and watch out for those wild fires.

  • I also found that the bacon was a bit crumbly when we used it the first time. We put it in some beans so it didn't matter. Still rendered a lot of fat even though it had been canned. Tasted great. I am going to try to par bake the bacon prior to canning and see how it turns out. Just for fun. I wonder if baking it first would help it not be so crumbly. Oh well, only one way to find out right? Thanks for sharing. Noreen

When you said it smells wonderful...I took a big sniff ..oh how i wanted to smell the bacon. their was a company trying to make a smell device for your computer about 5 years ago , now i with they had succeeded!
