@Emerami X'3 Shaymin is awesome.

But actually, "shay-mən" is an official pronunciation and the way that Metzen himself says it. (For example, there's a video you can look up of him reading the Arthas: Rise of the Lich King prologue.) Both are correct and heard in voiced parts throughout the game, though, where "shah-mən" is probably a little more commonly said.
