it's interesting that Paul Gilbert chose this finale in order to popularize Haydn. It's definitely a witty finale, which you can tell because it returns to its central theme very many times, which Haydn did on purpose. Of course, the development in the middle is brilliant, but I guess you can use many things to popularize him, because Haydn is brilliant very often.
@GabrielDhalaman2 Personally I think that Paul's ego drives him to do such a thing. All the others you mentioned seem the kind of personalities that need that sort of accolade, or title of 'having played with an orchestra,' to feel worth - Paul seems far more humble and just in it for the pleasure of playing.
Of course I am not saying that Vai, Malmsteen or others have no worth. That would just be silly. I am just saying that they are more "Serious" (for that lack of a better word right now.)

No, serious is not the right word at all, since Paul is probably about the most serious to the craft of Music than any other guitar player near his skill level. I understand what you mean though, I guess you could say that Malmsteen puts himself on a higher pedestal easily. Vai is also super dedicated to his craft, but much more so to his own world of existence. Paul is like a sponge of knowledge of rock and music.
