The large box with the black top visible between the flywheels is the magneto. It's driven by a gear from the crankshaft and the wire you can see coming out of it is connected to the spark plug. The points are inside the magneto. That's all there is to it!
Yes, it's plain water. After a while (30 minutes or so around here) it starts to steam nicely. The last exhibition I was at was a school fete and the engine was running from about 6pm to 9pm. The effect of the steam coming from the hopper under lights was quite striking.
Cooling. Some engines were air cooled and are easy to pick out because of the cooling fins - see the video of my Farm Pumper. Some are hopper cooled like this Sundial and others are tank cooled, which just moves the water reservoir to an external container or tank.
Mid-last century, this engine was used on a remote property in NSW to pump water from a well to an overhead tank, which is called a header tank. The water would then gravity feed to the household and outbuildings.
I have just bought one and I need some bits and I have no info on them or know where to get parts! can you help? Thanks.

H.V. McKay (Sunshine Harvester) used the
"SUN-" prefix on a lot of their products including this "Sundial" engine.

Made by H. V. McKay Machine Works in Sunshine, Victoria, Australia. A rather interesting double-flywheel engine- it's an L-head!
